This is "Don't Go Bacon My Heart" our entry in the 2023 @lapoutineweek. We make candied Maple Leaf smoked bacon the star of our locally sourced Poutine. Homemade french fries start as perfect Peak of the Market russet potatoes. We top them with a seven-cheese blend and smother it all in horseradish beef gravy. A creamy chive aioli is drizzled on top and covered with cheese crisps (just like the good crispy stuff on a nacho pan), vine-ripened tomatoes, green onion, and of course, candied smoked bacon.
